Black Bean Brownies

You would never guess their are beans in this yummy snack!
 
1 1/2 cups black beans (1 15-oz can, drained and rinsed very well-also make sure to check the ingredients, and there are no spices other than salt added.) or make your own in a crock pot....cook on high for 4 hours.
4 Tbsp. cocoa powder- Dutch or regular 
1/2 cup quick oats (I usually powder mine with a coffee grinder before had for a smoother finish)
1/4 tsp. salt
1/3 cup pure maple syrup, honey or agave
1/4 splenda or brown sugar
1/4 cup coconut or vegetable oil
2 tsp. pure vanilla extract
1/2 tsp. baking powder
1/2 cup to 2/3 cup chocolate chips
optional: more chips, for presentation
 
Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, or blender, and blend until completely smooth. Really blend well. Stir in the chips, then pour into a greased 8×8 pan. Optional: sprinkle extra chocolate chips over the top. Cook 25-30* minutes, then let cool at least 10 minutes before trying to cut. 
 
*Note - If you under bake the texture will resemble mushy partially melted fudge and fall apart, still delicious but need to be refrigerated to hold together.

Raw Vegan Ice Cream

I used to make this for the kids- and they never knew it wasn't ice cream!

3 Lrg. Frozen Bananas
2 Pitted Dates
1/2 Cup Coconut Milk  (or Almond Milk)

Blend in a food processer until smooth and freeze for 10 min.

- You can add in coco powder, strawberries or any other fruit to flavor your Yummy natural snack. Enjoy!

My Favorite Dressing

Dressing or Marinade
- My friends love this Recipe and ask me to bring it to every event!

Note:  The longer you let it sit in the fridge the more the oil and vinegar absorb the spices....the better the taste.

1/2 cup Expressed Olive Oil
1/2 cup Organic Rice Vinegar
1/2 handful Chopped Cilantro
2 Cloves Minced Garlic
1 1/2 TBL Basil
1 TBL Oregano
2 TBL Black Pepper

Banana Cookies

Simple and Yummy Sugar, Dairy and Gluten Free Idea:


3 Ripe Bananas

2 Cups Rolled Oats

1 Cup Dates, Pitted and Chopped

1/3 Cup Olive Oil

1 tsp. Vanilla extract

 

Directions

Preheat oven to 350

In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonful’s onto an ungreased cookie sheet.

Bake for 20 minutes in the preheated oven, or until lightly brown.
